1. Prepare all the ingredients and measure them out.
2. Place the sesame oil, ground pork, grated ginger and minced garlic in a large frying pan on medium heat.
3. Mix the meat together until it starts to brown.
4. Mix in the shredded cabbage, shredded carrots and gluten-free soy sauce. Mix all ingredients together and cook for about 3-5 minutes.
5. Crack the eggs in a large bowl. Season the eggs with salt.
6. Mix them until well combined.
7. Add the avocado oil to a frying pan on medium heat. Add the egg mixture until the pan is full. Allow it to sit for about 1-2 minutes.
8. Flip the egg wrap carefully and cook for about 1-2 minutes. Transfer to a plate.
9. Spread the vegetable and pork mixture on the wrap.
10. Roll the egg wrap in a burrito-like fashion. Then roll it over the pork and then fold the ends in half.
11. Serve and enjoy
